Day one of being "back on track"
It's funny to me that I still have to tweak what I do. I think about what I was eating less than a year ago, and it is laughable that my battle now is eliminating the 2 chocolate grahams I eat in a day! I have progressed so much. When I think about all I have done, I am very proud. I just need to take these last few steps to keep me going in the right direction!

So, I get up this morning and I made pancakes for Anthony and Josh. I didn't have any, but it didn't bother me. I have eaten 2 small peanut butter cookies* (recipe at bottom - so good!) and I am just about to enjoy a cup of tea with skim milk and SF vanilla syrup. I have students to teach this morning into the afternoon, so I have to be sure I eat something substantial before I start. I am planning on veggie sausage. 20 Grms protein in a 2 patty serving. And they are very yummy.

commented that perhaps the new full time job will help with my getting back on track, and I think she is totally right. Being busy and having more structure in my day will certainly help, but I have to be really proactive in planning all my food and fluid ahead of time, so I have enough with me and I don't leave myself hungry without a good option.

The only problem with being so super busy is working out... when the hell am I going to do that?? You know what? I have to conquer that problem another day. It's too much right now...

Peanut Butter Cookies

1 cup peanut butter (I use skippy natural, and sometimes I use half creamy, half crunchy)
1 cup splenda (I use a little less than a cup... I don't like too much of the fake sugar flavor
1 egg
1 tbs vanilla extract

Preheat oven to 350
Mix PB and splenda till incorporated
add egg and vanilla, mix till incorporated
roll into balls and place on baking sheet
using a fork, smoosh (yes, a very technical term) the PB balls down flat, making a pretty criss cross pattern
bake for 10 minutes
Makes at least 12 cookies... but I try to make them smaller and get 15 or so.
Doesn't seem like this should work without some sort of flour, right?? Trust me! Try them!

Edited to add: I have heard this recipe spoken about at the ObesityHelp online forums, but didn't make them till I saw Paula Dean on Food Network make them in her show once. This recipe is in NO WAY my own!
