Recipe - Lobster "pie"

Ok, here we go. I have been having a craving for lobster pie, this to-die-for delish dish a restaurant in my town makes. It's terrible for you, lots of butter and cream and puff pastry yummyness - So, I decided to try and make my own version, hopfully cutting the fat, calories and carbs from it. So, here is what I came up with. NO, this is NOT something one should be eating everyday. The cals and fat are a TAD high - but it sure beats the alternative.

Ingredients:
6 oz cooked lobster meat
2 tbs I can't believe it's not butter spread
2 tbs butter
1 tbs olive oil
2 cups skim milk (appox - depending on how thin you want your sauce)
4 tbs flour
3/4 cup 2% chedder cheese, shredded
2 carbquick biscuts (find the mix @ www.netrition.com. The stats are WILD)
garlic powder to taste
onion powder to taste
dash nutmeg
salt
pepper

If you need to make your biscuts, preheat over to 350. Make according to the box instruction.
Melt 2 tbs I can't believe it's not butter spread in a pan.
Add garlic powder and onion powder to your liking
add cooked lobster meat a saute until the lobster is warmed through
remove lobster mixture from pan, reserve
on low to medium heat, add 2 tbs butter and 1 tbs olive oil to pan, melt together
turn heat to low, add flour, one tbs at a time, wisking the butter and flour together as you add.
once the butter and flour are incorporated, start adding skim milk, streaming it VERY SLOWLY and wisking constantly. Continue adding like until the sauce is THINNER then you would like. You need to wisk this sauce constantly till the end!
Add salt, pepper, and a dash on nutmeg. Wisk. A lot.
Add cheese, wisk until melted
add additional garlic powder to taste.

Whew!!

Take a carbquick biscut and cut it in half and lay open on your plate.
place 1/2 serving of lobster on top
top with 2 tbs cheese sauce.
Wow. So good.

So, I am NOT a chef, so I am sure I could have made, like, 1/2 the amount of sauce (The rest is in the fridge) but whatever!

Calories: 303.8
Fat: 20.6 gr
Carbs: 9.4 gr
PROTEIN: 36.2 gr

All I can say is - it was delish. Not something I'll indulge in everyday, but I was damn proud of it!!
